Grandma Ruth's Chile Burros

Nothing brings me back to the past as easily as the taste and smell of my Grandma Ruth's chile burros!! They are even better when eaten with homemade tortillas (or you can buy the cook and serve ones at Costco!)

First, cook a roast covered in water with salt, pepper, garlic, and oregano (don't go easy on these seasonings!) until meat is tender. (I always cook mine all day long in the crock pot.) Save the broth, but pull the meat out and let it cool. Once it's cool enough to handle, pull apart the meat until it's all shredded.

In a pan, cook 1 medium onion and 2 cans of green chiles with the saved broth for 30 minutes. Add the shredded beef and 1/4 tsp. oregano. Bring this to a boil and then thicken it slightly with flour.

This is usually served by my family with cheese and sour cream (both optional) in a flour tortilla.

Well that solves the great debate about what to eat for dinner tomorrow- my mouth is already watering!
