Easy, but DELICIOUS, bread/rolls

This is a 1 hour bread recipe that is SO easy, but surprisingly delicious!
  • 5 1/4 C Bread flour
  • 1/4 C sugar
  • 1/2 TBS salt
  • 3 TBS (heaping) instant (bread machine) yeast
  • 1 1/2 TBS Lecithin
  • 2 C. HOT water (not boiling)

Combine the 1st 4 ingredients together in a Bosch, kitchenaid, or if you're like me and don't have either, combine by hand! Add the Lecithin, but DON'T measure it out- it's too sticky and you won't be able to get it out of the tablespoon or off your hands, or off the spatula, so just eyeball it! Then add the water. Your mixture should still be pretty sticky, but pulls away from the sides of the mixing bowl. If not, add more flour or water until it is the right consistency. Mix, or if you are doing it by hand, knead dough for 5 minutes. ***Just a trick I use: When kneading a sticky dough like this, spray your counter top with Pam first. (Don't flour it as your dough will get too tough from too much flour!)

After you've mixed it for 5 minutes, DO NOT add more flour or water. Divide into two loaves for bread and place in greased bread pans, or for rolls, divide out and place on greased cookie sheets. Allow to rise to your preferred sizes (mine rise for about 20 minutes), and then bake @ 350 degrees: bread=25 minutes, rolls=10 minutes. *When you pull it out of the oven, rub butter over the tops for a shiny, softer top!
